The stovetop version is four hours of never letting it boil, and clarity is the whole point of it.
>> step: parboil 10 min, rinse every piece
Cover @chicken carcasses{2 1/2%lb}(1.1 kg; backs and frames, wing tips left on), @chicken wings{1%lb}(450 g) and @pork neck bones{3/4%lb}(340 g) with @cold water{2%qt}(1.9 L) in the #Instant Pot{}, bring up to a boil on Sauté and ~parboil{10%min}, then drain and rinse every piece under the tap and scrub the inner pot.
>> step: cook at high pressure 60 min
Return @&(~1)rinsed bones{} to the pot with @water{2 1/2%qt}(2.4 L), lock the lid and ~pressure cook{60%min} at high pressure.
>> step: wait out the full natural release 30 min — never the valve
Let @&(~1)pot{} ~natural release{30%min} until the pin drops by itself.
>> step: steep the aromatics and kombu 30 min in the residual heat
Drop @yellow onion{1%large}(halved), @fresh ginger{2%in}(sliced), @scallion greens{4%stalks} and @kombu{1%piece}(4 in) into @&(~1)broth{} and ~steep{30%min} in the residual heat with the lid resting on top.
>> step: strain through cloth, stand 20 min, lift the fat off and keep it
Strain @&(~1)broth{} through a fine sieve lined with a cloth, let it ~stand{20%min} and lift the fat off the top. That fat is the chicken fat the shoyu and shio bowls float on.
