Knead @all-purpose flour{3%cups}(390 g), @instant yeast{1 1/2%tsp}(5 g), @whole-milk yogurt{1/3%cup}(80 g), @olive oil{1/4%cup}(60 mL), @fine sea salt{1 1/2%tsp}(9 g) and @warm water{3/4%cup}(180 mL) ~knead{8%min} to a soft, satiny dough. The yogurt and the extra oil are here for one reason: this dough gets folded into a sharp corner three times and a lean bread dough cracks along every one of them.

Salt @baby spinach{1%lb}(450 g; chopped) with @kosher salt{1%tsp} and ~drain{20%min}, then take it up in a cloth and wring it until almost nothing more comes out. A fatayer leaks along its seams if the spinach is wet, and it leaks in the oven where you cannot fix it.

Dress @&(~1)wrung spinach{} with @yellow onion{1%small}(diced fine), @lemon juice{2%Tbs}(30 mL), @ground sumac{1%Tbs}(7 g), @extra-virgin olive oil{2%Tbs}(30 mL), @pine nuts{2%Tbs} and @black pepper{1/2%tsp}. Sour is the point — sumac and lemon both, and more than feels sensible, because the dough around it is plain.

Roll @&(~3)proved dough{} into five-inch rounds, mound @&(~1)spinach filling{} in the centre of each, and fold three sides up over it into a triangle, pinching each seam hard from the point inward. Pinch dry, with no filling caught in the seam, or it will open.
