Whisk @mayonnaise{1%cup}(230 g) and @whole-milk yogurt{1/2%cup}(120 g) together until there is no streaking. Menus call this tzatziki and there is no cucumber anywhere near it; the cart's white sauce is a mayonnaise sauce with yogurt in it, which is why neither the tahini sauce nor the real tzatziki on this shelf tastes like the one you are thinking of.

Loosen @&(~1)base{} with @distilled white vinegar{1%Tbs}(15 mL), @lemon juice{1%Tbs}(15 mL), @granulated sugar{1%tsp}(4 g) and @water{2%Tbs}(30 mL) until it pours in a ribbon rather than a blob. It has to be thin enough to run off a piece of chicken and coat the rice underneath.

Whisk @garlic{2%cloves}(grated on a rasp), @dried oregano{1%tsp}, @flat-leaf parsley{2%Tbs}(chopped fine), @kosher salt{1/2%tsp} and @black pepper{1/2%tsp}(coarse) into @&(~1)thinned base{}.

Chill @&(~1)white sauce{} ~chill{1%hr} before it goes anywhere near a plate. Straight from the bowl it tastes of raw garlic and vinegar; an hour cold and it tastes of the cart. It keeps a week.
