Boil @elbow macaroni{1%lb}(450 g) in @water{4%qt}(3.8 L) with @kosher salt{1%Tbs} and ~boil{8%min}, a minute past al dente, then rinse it cold. This is the one pasta dish where soft is right and rinsing is right: cold dressing seizes on hot pasta, and starch left on the surface glues the whole tub together.

Whisk @mayonnaise{1 1/4%cup}(300 mL), @cider vinegar{3%Tbs}, @granulated sugar{1%Tbs}(12 g), @yellow mustard{1%Tbs}, @kosher salt{1 1/2%tsp} and @black pepper{1/2%tsp} until it is looser than you think it should be. It tightens overnight as the macaroni drinks it, which is why the deli version is sweet-sharp and slack in the bowl.
